We seek to break the boundaries of the Australian dining scene by creating experiences centred around diverse cultural experiences. We don’t want to fit in, we aim to stand out.

Kolture delivers exciting concepts through food, drink, design and entertainment which reflect the vast stories of the people within the group.

David Bae

Founder & CEO

No newcomer to the hospitality industry, David has a family history steeped in hospitality - his father, Donald Bae, was the first person to bring the concept of Korean BBQ to Australia in 1992.

David has a strong desire to provide Sydneysiders with authentic culinary and cultural experiences fuelled by his childhood experiences visiting Korea and growing up in his family’s restaurants that led him to move into restaurants and bars.

“I’ve always had an undeniable passion to put Korean food on the map in Australia. Every time I would go back to Korea, I would have these incredible dining and drinking experiences and always think to myself ‘if only this was back home’. I create experiences that bring elements of Korea’s dining and drinking culture and nightlife to Sydney so that people can experience them here.”

Jacob Lee

Executive Chef OF KOBO, TOKKI & LEEMIX

Jacob is the Executive Chef across Kobo and Tokki, and new venue, Leemix, set to open mid-2023.

Jacob grew up in Jeolla Province in South Korea, a gastronomic gem that is still some what undiscovered by the rest of the world. He moved to Australia in 2007 to pursue his dream of becoming a chef.

He has an unparalleled passion and creative vision for Korean food and loves taking his guests on a culinary journey. He loves being adventurous with his cooking and experiments daily with new combinations of ingredients and flavours that people might not have experienced before.

“Our passion lies in creating venues and experiences that embrace the diversity and journeys life has brought us and carry through the soul, excitement and flavours of different cultures, especially Korean culture. My dream is that one day Korean cuisine will be mainstream in Australia.”
